Really good news that microgreens interest is growing. Not so sure that huge scale production would be good news for us small growers, but hopefully we’ll always be able to outcompete large scale growers with quality and freshness.

Farmers market question
I need some opinions here. I do the same farmers market every Saturday. previously there was another grower doing it and then they backed out. So, we took over and just recently they wanted to come back, and the market actually booked us there on the same day, so I voiced my concerns, and they did right by me and canceled the other with the understanding that any Saturday that we were not their others could do it which I'm fine with I booked for the rest of the year but I missed Aug.17 and of course the other grower booked. I booked it after they brought it to my attention Should I still do it or should I do a different market just for that day? I know it will hurt us both having 2 greens growers there.

It's hard to have another grower in a small market. I am in the same situation. However in my market we are both allowed to be, any day, whenever we want. So we are always there, every weekend, both of us. It is hard indeed to make such a big effort, grow product, set up, invest time in the weekend, and have small sales. I know I lose some sales from my competition being there, I noticed an increase in sales a weekend when they were absent. I think at least some of those new customers returned to my stand on following weekends. Even if my sales are very modest, over time I am seeing more return customers, they bee-line it to my stand and ask for a product I created. It is so satisfying. In other words, even if I and my competitor both grow micros, we offer different products. If I were you I would indeed show up. As you develop a following people will come more and more consistently to visit YOUR stand, you want to be there for your repeat customers, consistently. I also sell my products in a small market, and I let my customers at the farmers market know. Beyond what they buy from me at the farmers market, hopefully after having that in-person interaction with me over the summer at the farmers market, they will choose my product over those from my competition, when they buy year round/ in the fall, in the winter, in the spring, in the small market. In other words, there are some benefits that don't materialize immediately, but they do eventually, from being at the farmers market. But I hear you. I still feel frustrated after a huge effort and a long day, if the level of sales is too modest.

@Jessica Hicks I’ve been in that situation. Removed them from direct light on the shelf, left them be in ambient light. Emergence of true leaf delayed, yay 😀 , but they stretched -they grew. This was what worked best for me. Put them under lights for longer hours per day, that did slow down vertical growth but true leaf appeared sooner. 😱 They react one way or another, still growing… Did not try but perhaps will… watering less. Another thought that just came to mind, with the goal of having all/most grows for mixes on the same growth time... skipping the soak step for sunnies, then watering conservatively when sowing for germination (to slow germination down). This might add a day, maybe two, to the cycle.
