It’s been a minute…
I didn’t mean to leave us silent here, but we’ve been on a mission elsewhere, not too far away. It’s usually about continuing to bolster the foundation of the whole project so we can do more. As we plan for a 2.0 launch here on Skool I thought I’d leave you with somethin that made me… smile. So much has happened over the last few weeks in the world, that’s been hard to smile about. Honey Lime Chicken & Avocado Rice Stack
Ingredients: For the Chicken Marinade: 2 boneless, skinless chicken breasts 2 tablespoons olive oil 2 tablespoons honey Juice of 2 limes 2 garlic cloves, minced 1 teaspoon cumin 1/2 teaspoon chili powder Salt and pepper to taste For the Rice: 1 cup jasmine or basmati rice 2 cups water 1 tablespoon lime juice 1/2 teaspoon salt 1 tablespoon chopped fresh cilantro For the Stack Assembly: 1 ripe avocado, diced 1/4 cup red onion, finely diced 1 small tomato, diced Fresh cilantro for garnish Optional: lime wedges Directions: In a medium bowl, whisk together olive oil, honey, lime juice, garlic, cumin, chili powder, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes. Cook rice according to package instructions. Once cooked, stir in lime juice, salt, and chopped cilantro. Set aside. Heat a grill or skillet over medium heat. Grill marinated chicken for 5-6 minutes per side or until fully cooked and slightly charred. Let rest 5 minutes, then slice. In a small bowl, combine diced avocado, tomato, red onion, and a pinch of salt. To assemble the stacks, use a round mold or small bowl: layer cilantro-lime rice, then a spoonful of avocado mixture, followed by sliced grilled chicken. Carefully remove the mold, garnish with fresh cilantro and lime wedge if desired. Serve warm. Prep Time: 15 minutes | Cooking Time: 20 minutes | Total Time: 35 minutes Kcal: 420 kcal | Servings: 2 servings

Hey all who are doing the Hot Summer Bod Challenge, just starting with us at Grounded or if you have decided to make a quantum leap in any area of your life! Emaly has been crushing the resistance in in both her mind, and in the gym. This week she lifted more than she ever thought she could lift. With impressive discipline to just keep showing every appt, 3x weekly she is having breakthroughs every week. Congrats Emaly for working through old habits and thought patterns to find several wins! Keep going!

SUMMER TRAINING
What should it look like? Here’s some thoughts. We always say “everyone’s different” but that’s not necessarily true in the God scheme of things. We all have a skeleton and nervous system that relies on a healthy muscle structure. We all have a metabolism that relies on a good diet to operate efficiently. We all have a mental state that demands energy, perspective and inspiration to stay positive. So it’s simple you see. Water the flowers and flowers grow. Let them burn out, and they die. No matter what the hell you've got going on this summer, you make a no compromise rule for each of these things. 1. Strength Train 3x/ week. Minimum. Add activity that’s cardio and adventure based. 2. Eat more Protein first, Fat second, Carbs sparingly. Whole Foods first, always. Free range chemical free package free. Drink filtered water, and stay sugar free as possible. 3.Take Nootropics, and other brain food supplements, read subjects you want to more about, ask questions that people that have what you want, hang around people that lift you up. Do things that you know in your heart are positive. Avoid negativity. Hope that helps simplify for you. Don’t make it complicated. Stay Grounded PB
