I had some leftovers of almond paste and I decided to try Derek’s (from Make and Drink channel) fast method of making almond orgeat. The idea is to make almond milk from almond paste in a couple of minutes. And I have to say that the result is a way better than I had with blending roasted almonds and water! The taste is very almondy so I didn’t have to add much almond extract in the end. The only drawback is the color - it is a bit darker in comparison to the one from blanched almonds. Maybe because my paste was made from non-blanched almonds. So the recipe for 250 ml of 2:1 syrup is: 1 tablespoon organic almond paste or almond butter 100 ml warm water 200 g cane sugar 1 teaspoon rose water 1 teaspoon orange blossoms water 4-5 drops almond extract Just blend almond paste and water in a blender, then strain through nutmilk bag. Put it back to blender, add sugar, almond extract and flavoring water (optional) and blend again until sugar is completely dissolved.
