The perfect combo - so many variations and the ideal anytime go to.. my 6 yo just requested this for supper, but it also makes a great breakfast option, dessert and light snack ๐Ÿ‘Œ Itโ€™s been a very long time since I had Greek yogurt, but this is exactly how I remember it! I used to love it with honey - since discovering sweet freedom vegan honeee we go through gallons of the stuff! Ultimate yum! Whatโ€™s your fave combo?

So simple but still it feels so fancy! Tofu scramble, chopped cucumber, salted potatoes, garlic roasted onions, peppers and tomatoes on the vine with hummus ๐Ÿ‘Œ Getting myself a milk frother was such a brilliant investment! It has a cold foam setting, so I add a couple of spoons of instant coffee to my soy milk and pistachio syrup for the scrummiest ice whipped coffee ๐Ÿ˜

A discussion about pirates yesterday with my youngest led to me craving my Nanan's apple pie (pie-rates you see ๐Ÿฅง ๐Ÿดโ€โ˜ ๏ธ) from my childhood. I don't have her recipe and it wouldn't have been vegan anyway but I tried to sort of recreate it today with my boys, even in the same dish she used to use. So good that we ate it for our first course for dinner with alpro ready made custard. My pastry looked lumpy but it tasted delicious and I think my Nanan would have approved. Still hungry after the pie we needed something quick and easy. My eldest spotted some gnocchi in the cupboard and requested it fried in a pan with rosemary to make it crispy, then topped with cheese (I used plant based Cathedral City and added some yeast flakes and a sprinkle of garlic granules) and grilled to make the cheese all melty and the edges crispy. This isn't something I've made before, he just thought it up cos it's what he fancied and he looked so passionate about the melty cheese that I couldn't resist. I need to put him in charge in the kitchen more often because it tasted so good. I can't claim it was healthy or anything but it was certainly good for the soul ๐Ÿ˜Š Fried carbs and melty cheese - he's definitely my kid ๐Ÿ˜‚
