Banana Bread Muffin Cups (Made with Cottage Cheese) 1 Cup cottage cheese 2 ripe bananas mashed 1 cup all-purpose flour or almond flour 1/2 cup of sugar (I use monk fruit cane 1/4 cup) 2 large eggs 1 tsp baking soda 1/2 tsp salt 1 tsp of vanilla 1/2 tsp cinnamon 1/2 cups of walnuts (optional) Total Cook time 30 min, Prep 10 min, Cooking 20 min Preheat the oven to 350 degrees. Line muffin pan with parchment liners or avocado oil. In a large bowl, combine cottage cheese, mash banana, vanilla, and eggs. Mix until well blended. Whisk together flour, sugar, baking soda, salt, cinnamon, and walnuts if using. Mix dry to wet ingredients. Add to muffin cups and bake for 15-20 min or when toothpick is inserted and comes out clean.
