Snack of the Week (2)
Banana Bread Muffin Cups (Made with Cottage Cheese) 1 Cup cottage cheese 2 ripe bananas mashed 1 cup all-purpose flour or almond flour 1/2 cup of sugar (I use monk fruit cane 1/4 cup) 2 large eggs 1 tsp baking soda 1/2 tsp salt 1 tsp of vanilla 1/2 tsp cinnamon 1/2 cups of walnuts (optional) Total Cook time 30 min, Prep 10 min, Cooking 20 min Preheat the oven to 350 degrees. Line muffin pan with parchment liners or avocado oil. In a large bowl, combine cottage cheese, mash banana, vanilla, and eggs. Mix until well blended. Whisk together flour, sugar, baking soda, salt, cinnamon, and walnuts if using. Mix dry to wet ingredients. Add to muffin cups and bake for 15-20 min or when toothpick is inserted and comes out clean. Serving Size is about 12 168 kcal Fat 6g Sugar 12g (I substitute Monk Fruit) Protein 6g Carbs 23g Working on the cookbook and this will be included.

1 LB Ground Chicken .5 small dice onion Fresh minced garlic (whatever your heart desires) Fresh parsely or dried Salt and Pepper to taste Mix all ingredients and make into patties. Should make 6 to 8 patties. Med hot pan. 1/2TSP avocado oil saute patty till cook to temp. Set aside and cool These are fantastic cold. I have mixed in dice pickles, pepperchini, eaten on lettuce wrap, chucks of cheese, and even added little undercooked cooked rice (white) to add some carbs for those long days. Get creative. This is a great way to keep it light and eat 1 after school and 1 20 min prior to game Macros - 2 patties 155 Calories 35g Protien 1.4g Fat 3.3g Carb Add a little w the oil Try it and let me know ow what u think.
