High-Protein Crispy Potato Egg Pan Ingredients • 1 small potato, thinly sliced • 3 whole eggs • ½–1 cup liquid egg whites (optional but boosts protein) • 1 tbsp of grated cheese • Spinach, peppers, tomatoes, or onions (whatever you like) • Salt + pepper • Olive oil spray How to make it 1. Lightly spray a pan and heat over medium. 2. Lay the potato slices flat in the pan so they cover the bottom. 3. Cover and cook for 8–10 minutes until the potatoes are tender and golden. 4. Whisk eggs (and egg whites if using) with salt and pepper. 5. Pour eggs over the potatoes and add veggies + cheese. 6. Cover and cook until the eggs are set and cheese is melted. 7.
