Just thought I’d share a few meals I’ve recently prepared. I’m a huge meal prepper and love to create easy single serving meals in bulk that I can freeze. I use single serving storage containers so I can pull them out of the freezer as needed. I shared below 3 photos. The first is Jambalaya. The second is Turkey Pot Pie. The third is a Chicken & Winter Squash Casserole. I know some people avoid carbs. I’m not referring to fruits and veggies. But I think grain based carbs in moderation can fit into a healthy diet. I make everything from scratch, including some veggies from my own garden. I don’t have the full breakdown on protein and fiber, but I calculated the protein content of the Jambalaya to be ~ 37 grams. I’m planning on making some gumbo this weekend.
