Recipe: Banana Egg Muffins
These are the easiest to make! I make a batch of 6 every week and I have them after my workouts (I “frost” them with Greek yogurt or protein powder mixed with water if I want a more protein)
in a blender:
1 1/2 cups egg whites (from the carton)
1 medium banana (anywhere from 100-120g if you have a food scale)
4 whole eggs
Cinnamon to taste
(Makes 4 servings; in a 12-muffin pan one serving is 3 muffins)
Blend well, then divide evenly in muffin pan.
Bake at 375 degrees for 20-25 mins depending on your oven (23 honestly works perfectly for ours).
