Healthy Protein rich Lasagne recipe
I've attached a recipe that I thought you might like to try - it's got 30g protein per portion and is absolutely delicious! It's dead easy, I cook everything in a large frying pan, using pre chopped onions, frozen spinach (which i buy fresh, freeze as is, then crush the frozen spinach in the bag to use as 'chopped' straight from frozen) and pre-grated cheese (life is too short to hand grate mozzarella). I have a constant stock of this 'ready meal' in my freezer, I like it so much!
For the cups....1 x 300g pot of cottage cheese is a 'cup', so just use the empty pot for the spinach & mozzarella (just don'tquite fill the mozzarellato the top of the pot) '1/2 cup' pine nuts is a 100g bag (you could get 2 60g bags from Lidl, that would be fine and it's still cheaper than 1 bag of 100 from anywhere else) and likewise with the grated parmesan, it's around 100g, so a small pack of ready grated is about right.
With regards to getting wholemeal lasagna sheets, not that places do them but Sainsbury's, I use whatever I can find and don't use 8 sheets, just 6, so don't panic if you find you don't use as many.
