Sauerkraut… never tried before… but smelt the stuff in a can and went ‘yuk’…
Shopping on weekend and searched for sauerkraut not in a can.. couldn’t find fresh but was directed to it in a jar…
Must admit… this didn’t smell that bad… so my meal tonight and lunch tomorrow is my version of Madras Curry Chicken Delight with Sauerkraut
• Energy: ~2800 kJ per serve.
Ingredients:
• Chicken breast – 120g (cubed)
• Onion – ¼ (diced)
• Tomato – ½ (chopped)
• Cooked spinach – ½ cup
• Sauerkraut – ¼ cup
• Madras curry spice blend – 1 tsp (or mix turmeric, ginger, cumin, coriander)
• Sea salt & pepper – to taste
Method:
1. Heat coconut oil in pan, sauté onion and tomato (~3 mins).
2. Add chicken and curry spices, cook until browned (~8 mins).
3. Stir in spinach and sauerkraut, cook for another 2 mins.
Additional:
- I added mini capsicums ( bell peppers) in orange and yellow colour at the same time as onions
- Just before serving I stirred in 2 tablespoons of yogurt to provide a slightly thick & creamy sauce..
Also prepared breakfast for tomorrow morning:
Yoghurt with Chia, Flaxseed & Cacao Nibs
• Energy: ~1600 kJ per serve
Ingredients:
• Unsweetened plant-based yoghurt – ½ cup
• Chia seeds – 1 tbsp
• Ground flaxseed – 1 tsp
• Cacao nibs – 1 ts
• Strawberries – ¼ cup (sliced)
Method:
Mix all ingredients and chill the night before or for a minimum 10–15 mins before serving.
