Homemade Tortillas
Store bought tortillas are functional and that’s about it. They serve a purpose, but they’re simply not good. At least not after you’ve made your own tortillas and then have to compare homemade tortillas the store-bought 25 ingredient garbage. To make your own homemade tortillas all you need is: 2 cups all purpose flour 1 tsp salt 2/3 cup warm water 5 tbsp butter Combine all ingredients until a rough dough forms. Dump onto counter and knead until dough becomes smooth. Cover, and let rest for 30 minutes. Divide into 4 pieces for large tortillas or 6-8 for smaller tortillas. I always make a double batch and freeze the extras I don’t need. Press into a rough circle with the palm of your hand. Roll thin, then cook on a pan pre-heated to medium heat for about 60 seconds on each side...until small brown spots start to form on cooking side. Flip and repeat until all tortillas are done. Use immediately or allow to cool then place into a bag and into the fridge for 6-7 days or the freezer for months. Warm before reusing. I don’t know exactly when, nor when our food companies turned into morons and started adding a bunch of nonsense into our foods, but you can start telling them to piss off by swapping homemade store bought junk for good quality homemade foods like these tortillas. I just keep notes in my phone but I’d happily start writing it down and sharing it in here if there’s interest. Let me know! Note: it likely wouldn’t always include the recipe, because many times I’m trying something new out, or don’t have it written down yet, but that’s something I can always work to add or create later as well if it’s popular.
Creamy Homemade Hamburger “Helper”
I saw a comment somewhere on my social media the other day about hamburger helper. It reminded me of my early teens and going to my dad’s on the weekends. Boy, did we eat a good amount of hamburger helper style dinners. It may not be great for you, but it did taste great, and I loved that time with him. That comment, however, did inspire me to try and create my own style of hamburger helper, but homemade. Here’s the recipe I whipped up: - 1 package pasta (penne works well) - 1 tbsp olive oil - 1 medium onion chopped - 2 pounds ground beef - 1 tsp garlic powder - 2 (14 ounce) cans diced tomatoes with juice - 1 (6 oz can) tomato paste - 1 tsp Dijon mustard - 1 tsp Italian seasoning - 3/4 cup heavy cream - Salt & pepper to taste - Freshly grated cheese—I used Parmesan and Gouda DIRECTIONS: * Cook noodles at any time. 1.) Heat olive oil in a large pan. Add in chopped onions and cook until translucent. 2.) In the same pan add in your ground beef and garlic powder. Brown your beef. 3.) Once browned, add in your diced tomatoes, tomato paste, Dijon mustard, and Italian seasoning. Stir and bring to a simmer. 4.) Once simmering, add in your heavy cream and season with salt and pepper to your liking. Stir in the cheese. 5.) Serve and enjoy!
