What's Something You Learned From Writing Copy

I'm new to copywriting as someone who is writing Copy for imaginary people until I can get real clients (my imaginary clients name is Sam btw) What is something that you learned about writing copy and working with clients

One thing I learned was that I get alot of brain farts and straight up takes hours to finish a copy that or I just start at a half written copy. Are there any niches that you tend to go to or is it more general copywriting and what is it like working with clients
