I have started adding green garden peas to my meals for a bit of fiber as they don't affect my stomach.
The little waffles are made with fresh mozzarella and whole eggs. Perfect bun alternative for when the family is having burgers, or as a bread alternative for fried eggs.

To keep myself accountable, I send my sister a photo of my meals every day. Doing this also helps me keep track of what I have eaten and how it affects my body.
