Sweet & Savory Original Beef Jerky
Meat
5 pounds lean beef (top round, eye of round, bottom round, or sirloin tip)
Slice 1/8" to 1/4" thick
Slice against the grain for a softer bite
Slice with the grain for a chewier jerky
Marinade
1 cup soy sauce
1/2 cup Worcestershire sauce
1/3 cup brown sugar
2 tablespoons honey
2 teaspoons black pepper
2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon smoked paprika
1 teaspoon red pepper flakes (optional)
1 teaspoon liquid smoke (optional)
1 teaspoon curing salt (Prague Powder #1) for longer shelf life
