Sweet & Savory Original Beef Jerky
Meat
  • 5 pounds lean beef (top round, eye of round, bottom round, or sirloin tip)
  • Slice 1/8" to 1/4" thick
  • Slice against the grain for a softer bite
  • Slice with the grain for a chewier jerky
Marinade
  • 1 cup soy sauce
  • 1/2 cup Worcestershire sauce
  • 1/3 cup brown sugar
  • 2 tablespoons honey
  • 2 teaspoons black pepper
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon red pepper flakes (optional)
  • 1 teaspoon liquid smoke (optional)
  • 1 teaspoon curing salt (Prague Powder #1) for longer shelf life
