Sweet & Savory Original Beef Jerky
Meat - 5 pounds lean beef (top round, eye of round, bottom round, or sirloin tip) - Slice 1/8" to 1/4" thick - Slice against the grain for a softer bite - Slice with the grain for a chewier jerky Marinade - 1 cup soy sauce - 1/2 cup Worcestershire sauce - 1/3 cup brown sugar - 2 tablespoons honey - 2 teaspoons black pepper - 2 teaspoons onion powder - 2 teaspoons garlic powder - 1 teaspoon smoked paprika - 1 teaspoon red pepper flakes (optional) - 1 teaspoon liquid smoke (optional) - 1 teaspoon curing salt (Prague Powder #1) for longer shelf life
