Forgive me for I am a noob at this

I am curious if I can I create a customer voice agent for a supplement company that could look up order data, confirm shipments and refunds, handle Amazon and Shopify inquiries, create tasks like sending out a replacement bottle, and even know when to escalate things to a real human? And could this voice agent learn and get smarter over time, I guess like a RAG model? I have a potential client thats looking for something like this and I imagine I would have to use n8n to build something like this.
