With warmer weather coming this is my go to! Salmon/ chicken thigh salad. (either works) - 2 salmon fillets - 1 pepper - Half an onion - Handful cherry tomatoes - Cucumber - 1 lime - Feta cheese or halloumi - Apple cider vinegar (optional) - Any other salad you want - (if you want to add carbs cook some baby potatoes) 1. Season your salmon or chicken thighs with paprika, cajun seasoning, garlic powder and abit of olive oil. Cook 200*C for 20 min (Salmon) or 200*C 30 Mins (Chicken Thighs) 2. Cut up all your vegetables and add into a bowl. 3. Add lime juice, apple cider vinegar and olive oil and mix it together. 4. Add in your salmon or chicken and cut into small chunks. 5. Give it another mix after adding feta cheese and enjoy! If you make this reply to this and lets see how it looks!
