Personally, I also often use 20 g - ratio 1:15/1:16 too. It all depends on the coffee being brewed. 💎 The truth is that there are no rules, but rather guidelines. The goal is experience. 🦜 The barista you mention, if he didn't mention anything about the grind and the coffee he was extracting, is not a REAL barista in my opinion, but probably someone who was told "this is how it's done" and he replicates the recipe by parroting the four concepts he learned. ☕️ Enjoy the moment and, before brewing, ask yourself what that small producer from who knows where in the world wanted to put in that coffee.
