My daughter asked me to make ham & cheese potato casserole. Easy. Beginner stuff. I skimmed the recipe, shopped, prepped, and started cooking. Ina Garten, Midwest edition. And then—plot twist—those potatoes weren’t supposed to be raw. 😳 (It was hidden in the ingredients list: “2 cups sliced, peeled, and cooked potatoes.” Poopsicles!) Raw potatoes = double-and-a-half the cooking time. Thankfully, I had started early. Why? Because after 6 kids, I’ve learned that if I don’t over-anticipate, the domino effect of chaos is epic. 👉 Here’s the blessing in disguise: My constant battle with lateness turned into a habit of over-preparing.
