Eel sauce
Chef, what are the ingredients in eel sauce? It is one of my favorites and I put it on everything.

Eel sauce is just soy sauce and sugar reduced down at a slow simmer but it is not easy to make because it WANTS to burn lol. Easier to buy than to make. Sometimes called “unagi sauce” or “sushi sauce” I like the kikkoman brand & you can find it at Asian groceries or online!

Me too! What do you like with your tuna? My go-to roll is tuna and honeycrisp apple rolled with soy paper. The combo doesn't work well with seaweed, but is delicious with the apple. Sometimes, I'll make tuna nigiri with a shaved piece of apple on top (or watermelon, which is also great with tuna!)
