1 cup cherry tomatoes (halved) or 1 large tomato (diced)

1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
½ tsp cumin
Salt & pepper to taste
How to Make It
Brown the beefHeat a large pan over medium-high heat. Add ground beef, season with salt and pepper, and cook 6–8 minutes until fully browned. Drain excess fat if needed.
Add onions & peppersPush beef to one side, add olive oil, onions, and red bell peppers. Cook 3–4 minutes until softened and slightly caramelized.
Add zucchini & tomatoStir in zucchini and tomatoes. Season with garlic powder, onion powder, paprika, and cumin. Cook another 3–4 minutes until veggies are tender but not mushy.
Finish & tasteAdjust salt and pepper. Add red pepper flakes or lemon juice if using. Garnish with fresh herbs
