Mediterranean Stir Fry
Ingredients (4 servings)
Protein
  • 1.5 lb lean ground beef (90/10 or 93/7)
Veggies
  • 1 red bell pepper (sliced)
  • 1 medium zucchini (sliced or diced)
  • 1 small onion (sliced)
  • 1 cup cherry tomatoes (halved) or 1 large tomato (diced)
Seasoning
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp cumin
  • Salt & pepper to taste
How to Make It
  1. Brown the beefHeat a large pan over medium-high heat. Add ground beef, season with salt and pepper, and cook 6–8 minutes until fully browned. Drain excess fat if needed.
  2. Add onions & peppersPush beef to one side, add olive oil, onions, and red bell peppers. Cook 3–4 minutes until softened and slightly caramelized.
  3. Add zucchini & tomatoStir in zucchini and tomatoes. Season with garlic powder, onion powder, paprika, and cumin. Cook another 3–4 minutes until veggies are tender but not mushy.
  4. Finish & tasteAdjust salt and pepper. Add red pepper flakes or lemon juice if using. Garnish with fresh herbs
