- Preheat oven to 425°F.
- Clean your chicken (and sanitize that sink after… don’t play with me).
- Pat dry, then season generously with all spices + a drizzle of oil.
- Line a baking pan with parchment paper and lay chicken out evenly.
- Bake for 1 hour, flipping halfway through for even browning.

Instructions:
- Boil whole potatoes for ~5 minutes to soften slightly.
- Drain, let cool, then cube into bite-sized pieces.
- Toss in a bowl with oil + seasonings.
- Spread evenly on a baking sheet.
- Roast at 425°F for ~30 minutes, flipping halfway if you want extra crisp.

- Heat pan on high heat.
- Add a little butter.
- Toss in spinach and sauté until wilted (this happens fast—don’t walk away).
- Lightly season if desired.
