This light salad with roasted sweet potato is one of my favourite meals for summer. It’s fresh, colorful, satisfying, and a beautiful option if you’re transitioning toward a more raw, whole-food, plant-based lifestyle.
You don’t have to go 100% raw overnight. Sometimes the most sustainable approach is simply adding more fresh fruits and vegetables while keeping a few nourishing cooked foods, like sweet potato, to help your body adapt.
