Asian Cucumber Salad 🥒🥢✨
Ingredients
  • 2 large cucumbers (or 4 small)
  • ¼ red onion, very thinly sliced
  • 1 tbsp sesame seeds
  • ½ tsp black nigella seeds
  • 1 tbsp sesame oil
  • 1½ tbsp coconut aminos
  • 1–2 tsp honey or agave (to taste)
  • Pinch of natural salt
  • Juice of ½–1 lime (to taste)
Method
  1. Prepare the cucumbers
  2. Slice thinly into rounds or half-moons. (Optional: lightly crush with the side of a knife for better flavour absorption.)
  3. Soften the onion.
  4. Add sliced red onion to a bowl with a squeeze of lime and a tiny pinch of salt.
  5. Let sit 2–3 minutes to mellow the sharpness.
  6. Make the dressingIn a small bowl mix:sesame oil + coconut aminos + honey/agave + lime juice + pinch salt.
  7. Taste → adjust sweet / salty / tangy balance.
  8. Combine Add cucumbers to the bowl with onion.
  9. Pour dressing over and toss well.
  10. Finish Sprinkle sesame seeds + nigella seeds.Let sit 5–10 minutes for flavours to absorb (best slightly marinated).
Optional additions (if you ever want variation)
  • Fresh chopped cilantro 🌿
  • Chili flakes or fresh chili 🌶️
  • Grated ginger
  • Thin carrot ribbons
  • Crushed garlic (very small amount)
