- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 2 cups fresh spinach
- 4 cups low-sodium vegetable broth
- ยฝ cup plain Greek yogurt (or light cream)
- Salt & pepper to taste
