The majority of you voted for the second video—thank you so much for your feedback! I’ll be using that one. 💚 Yesterday, I meal-prepped for the week, except for the quinoa, which I’ll make today. I also stopped by my local farmers market and picked up some fresh okra. I turned it into three different dishes: baked okra, fried okra, and okra gumbo—three meals from one vegetable! I also picked up an eggplant and made eggplant Parmesan. Then I baked sweet potatoes, prepared a fresh salad, and roasted onions, peppers, carrots, and mushrooms. Then I pulled out my juicer and made some apple juice, carrot-apple with ginger juice, and Kale, spinach, and apple juice. I drank a lot yesterday, and then put those in the freezer. For dessert, I made Key lime ice cream with a Raspberry sauce. I got my alfalfa seeds in yesterday, started soaking them, and my microgreens won't arrive until Wed.
