πΏ Simple Vegan Lentil Curry πΏ
Ingredients:
1 cup red lentils (soaked 30 mins, rinsed well)
1 tin coconut cream (400ml)
1 tin chopped tomatoes (400g)
4 cloves garlic, minced
1 onion, chopped
2-3 tsp curry powder
tsp smoked paprika
1 tsp turmeric
1 tsp cumin
Salt to taste
Fresh herbs of your choice
Squeeze of lemon to finish
Method:
Soak and rinse lentils thoroughly
SautΓ© onions in olive oil until golden
Add minced garlic and all spices and stir for 1 minute
Add lentils, tinned tomatoes and enough water to cover
Simmer for 15-20 mins until lentils are soft
Stir in coconut cream
Simmer gently for 10 more minutes
Squeeze lemon juice in, season with salt
Top with fresh herbs and serve! π¦
Delicious served with quinoa for a protein packed meal, or cauliflower rice for a low insulin option!π
