Recipe: Tuscan Chicken Who would disagree to a flavorful chicken recipe that you can make with a grill and a food processor Only insanity would turn away a recipe that can be used as a marinade, a sauce and a heavenly spread Keep it simple π Equipment β’ Food processor β’ Indoor or outdoor grill β’ Grill pan / Charcoal / Propane β’ Tongs Ingredients 1 pound chicken (your choice) Sun-dried Tomato Marinade 1 8.5oz jar sun-dried tomatoes in olive oil 1/2 cup warm water 1/2 cup white balsamic vinegar 2 tsp Dijon 4 lg cloves garlic, peeled and chopped 1 1/2 cup packed fresh basil 1/4 cup olive oil 1 Tbsp honey Salt and pepper to taste Directions Heat charcoal or grill. 1. In a food processor, combine all ingredients for the marinade and purΓ©e until smooth. About 3 minutes. Set aside. 2. Coat the chicken on all sides and let it sit for 30 minutes, covered on the counter to bring to room temperature. 3. Once your grill is hot, grill tenderloins on each side for about 3-4 minutes. Cook until internal temperature reads 165 degrees F.
