Struggling to think of a quick one pan meal ? Well tonight I cooked up a colorful, flavour-packed bowl that felt both comforting and fiery. Tender chicken and smoky chorizo were roasted together with sweet potato, red bell pepper, and red onion until everything turned golden and caramelised. A sprinkle of spring onion added freshness on top. Smoked paprika and chillies gave it a warm, spicy kick, while a spoonful of raw honey melted through the dish, bringing just the right hint of sweetness to balance the heat finished off with a sprinkle of sesame seeds 😋 This was full of flavour with a slight kick it was delicious 👌🏾 Want more meal inspo? Tonight’s Dinner: Katsu Stir-Fry 🍲
🛒 What You’ll Need For the stir-fry: ✨ 2 chicken breasts (fried + sliced) ✨ 1 onion (sliced) ✨ A handful of spring onions (chopped) ✨ Noodles of choice For the homemade katsu sauce: 🥕 1 onion (finely chopped) 🥕 2 garlic cloves (minced) 🥕 1 medium carrot (grated or chopped) 🥄 1 tbsp curry powder 🥄 1 tbsp plain flour 🥄 300ml chicken stock 🥄 1 tbsp soy sauce 🥄 1 tbsp honey (or sugar) 🥄 1 tsp garam masala (optional) 🥄 1 tbsp oil 👩‍🍳 How To Make It 1️⃣ Fry chicken until golden, slice, set aside. 2️⃣ In a pan, cook onion, garlic + carrot in oil until soft. 3️⃣ Add curry powder + flour, cook 1 min. 4️⃣ Slowly stir in stock, then add soy sauce + honey. Simmer till thick (blend if you like it smooth). 5️⃣ In a wok, fry onion + spring onions, toss in noodles, chicken + katsu sauce. 6️⃣ Serve hot 🌶️🍜 Let us know what you’ve had for tea/dinner let’s get some inspo together 🫶🏽
