What Youβll Need π:
- 120g GF oats (blended into flour)
- 2 large eggs
- 100g full-fat lactose-free Greek yoghurt
- 300ml milk (dairy or plant-based)
- 30g chia seeds
- 60g vanilla vegan protein powder
- 1 tsp baking powder
- 1 tsp vanilla extract (optional)
- 40g dark chocolate chips
- 80g fresh raspberries (or frozen β add just before baking)
- Pinch of salt
How to Make Them π©βπ³:
1οΈβ£ Preheat oven to 180Β°C (fan 160Β°C) and line an 8x8β tin with parchment
2οΈβ£ Blend oats into flour
3οΈβ£ In a bowl, whisk eggs, yoghurt, and 100ml milk & vanilla until smooth
4οΈβ£ Stir in oat flour, chia, protein powder, baking powder, and salt
5οΈβ£ Add the remaining milk slowly until you get a thick brownie-like batter, you may not need to use all the milk
6οΈβ£ Fold in chocolate chips + raspberries (save some for the top)
7οΈβ£ Pour into tin, smooth the top, add remaining toppings
8οΈβ£ Bake 20-25 mins until golden + just set in the centre
9οΈβ£ Cool fully before slicing into 9 bars
