These ingredients gave me about 3 meals.
Ingredients:
- 1kg Chicken breast
- 4 cloves Garlic
- 2-3 shallots
- You can use any veg, but i used broccoli, tomatoes, Courgette.
- 400-500ml Chicken stock
- Uncooked Jasmine rice
- Tomato puree
- Parsley, coriander
- Feta cheese
- Spices: Paprika, garlic powder, cajun seasoning, salt, pepper, olive oil.
- Put a pan on medium high heat and while eating up, cut up your chicken and season generously, Dont put oil in the pan!
- Once, your pan is warm add your chicken and let it cook fully, while cooking cut up all the vegetables you are using.
- Take all your chicken out of that pan, put aside, and add a little oil into the pan now, after a few minutes, add in your chopped vegetables.
- Let them cook for a few minutes, then add tomato puree, give it a mix, then add in your uncooked rice(enough for 3 portions).
- Give the rice and vegetables a few minutes to cook, then add in your chicken and your 400-500ml of chicken stock.
- Put a lid on the pan and allow the chicken stock to boil, ,keep checking occasionally, after a few minutes add in your parsley and coriander.
- Once it reaches your desired consitency, Take off the heat, add in your feta cheese, plate up and enjoy.
Im currently sat eating it as i type this and i think it tastes better the day after!
