I eat salad in the car on my way home from work and its starting to feel like I need fresh food, not just should or want, but really need it to survive

My diet is still mostly cooked food. I find im eating 2 meals per day, 1 raw and 1 cooked. The cooked meal is rice, tofu and vegetables. I cant understand how to get enough calories on whole foods plant based, (let alone raw) without the addition of substantial amounts of oil. In what way is oil healthier than broccoli and rice and tofu? I dont get it ?

I want to keep eating salad and what else is there to eat raw except salad? Salad is the only raw thing I know except pickled vegetables that im addicted to and olives, jalapenos etc what do I replace rice potatoes and tofu with ?
I dont know how to eat it without the flatbread. I dont know how to live without rice and flatbread and steamed broccoli.
