Kids have plans here and there during the week, and with teenagers, the social calendar is ridiculously busy on the weekends because they can be dropped off and do things on their own... 🚗💨 Or in my case, I have one driver, so he's just willy-nilly! 🤪 🛑 However, we do have boundaries. It is definitely not free rein to come and go as they please. Still, family dinner doesn't always happen with sleepovers or just staying out later. So, when it does happen, it's still just as special. ❤️ Last night was a good one with 'speed batch' tacos! 🌮✨ 🧠 If you aren't sure what 'speed batch' is, then check out the Classroom tab! 🏫🎦 Anyways, with my batch of shredded chicken already made—and on its 3rd meal and counting—dinner was done in 20 minutes!! ⏱️⚡ Here is how it went down: - 🫘 Refried beans in a pot - 🍗 Chicken in a pot with salsa verde - 🥬 While all that warms, shred lettuce and cheese - 🫓 Warm the tortillas - 🥑 Slice an avocado - 🍽️ Eat! 🌽 We also had corn, which was just boiled while everything else was happening, but the core was definitely the tacos! 😋 Here is the recipe, written with the intent of getting it in your comfort zone quickly, because we already don't have any time.
