I take it a sheet pan is a roasting tin. Sounds good. You could do this in a airfryer which is what I did on Sunday. Airfryers are quicker and cheaper to run compared to a conventional oven. I alternate chicken or salmon each day. Baked potato or rice, cous cous, quinoa. I use raw red pepper, celery, tomatoes and celery as my daily vegetable intake of 50g of each. Fruit I have 2 kiwi's, banana, apple and 50g blueberries daily.. On top I have 25g of grenola and mixed nuts for energy. I try and keep my electricity cost to a bare minimum because of my benefits are low so I like to buy good quality fresh food weekly which comes in at £60 per week. If you can eat raw vegetables this is good for cutting cooking times and energy cost. Seriously think of purchasing a good two basket air fryer like the Ninja one I have approx £230. Plus a microwave for cooking frozen vegetables and frozen jacket potatoes. Hope this helps.
