Stretch & folds?
I am a beginner sourdough baker and self taught off the internet so not sure what is necessary in my sourdough baking steps. After I mix my dough and let it rest, I have always done 2 or 3 stretch and folds. I noticed in your sourdough videos @Sandra Brenes you go right into shaping after dough has risen 4 or so hours. Is stretch & folds necessary? Thanks!

They are not necessary. They can be depending on the hydration of the dough, but with the recipe in the course it is not necessary.

Hello! I’m taking my first stab at making dough for bread and mixed it at 7:45am and it doesn’t appear to have risen at all. 🤔

@Haley Allison The chilly air can slow growth. I tagged you in a comment below to help you get that sourdough more sour.

Did you cover your bowl? That might help keep it moist and growing. If the dough is too dry, it won’t have flexibility to grow.

@Haley Allison this video will help with knowing how to get the sourdough more sour. The longer the dough ferments, the more sour it becomes.
See the difference
I mixed up some sourdough dough tonight before dinner. These were mixed up within a few minutes of each other, but yet they have grown at different paces. Same ingredients and measurements. The slightest change in the environment can make a difference. I think the one on the right was getting a draft.
