@Jade Harris I find more nutty or citrus ones with good processes and light roasts. Honey process from Kerehaklu estate roasted light to medium from different roasters was my favourite for a very long time with a very identifiable nutty and juicy flavour. Of late many other estates and roasters have wonderful coffees. I've included some of my notes and pictures of my notes from a while ago to give a better idea.

Traveling
When traveling, whether in country or out, do you seek out new coffee shops and cafes? What do you look for when seeking out new shops? Roasts their own coffee? Unique coffee offerings?

Sometimes I look up cafes before going. European coffee trip app is a wonderful resource. Usually I want to see if they serve filter coffee. Even otherwise if the cafe has some extraordinary features, feels cozy or maybe is with photographing then I turn up. If I'm staying long in a place I look for coffee beans to buy from the shop to use there or bring back home. I don't go out of my way to visit a cafe, but they're a consideration when planning the day

@Mark Paradis I've found many interesting places that way, one of the best ones was Mardi cafe in Paris.

From my research over the past week or so, it seems a lot of us here started with “just loving coffee”… but for some, that passion has sparked bigger ideas. (eg. (Bean)Conquer-or the Pour-over
Ridiculous title? Sure. But that’s been my battlefield the last few months. Those who know me know I’ve long waved the Aeropress banner with pride. Meanwhile, my poor V60 sat in exile, only summoned on rare occasions. Then came the challenge: conquer the pour-over. I even called in a certified trainer as a battle advisor. The problem? Every warrior (brewer) has their own “ultimate recipe,” and while they’re all good, my results were hit-and-miss. Enter my secret weapon: Beanconqueror App, paired with the trusty Bookoo Mini Scale. Once I started logging every skirmish (brew), the fog of war lifted. Switching from a Natural to a Washed or Special Processed coffee? I can now look back at battle plans that worked. Two or three skirmishes later, victory tastes like a 5-STAR cup. Do I win every fight? Not quite. But at least I know whether the enemy was grind, pour, or bloom — and how to strike back next time. Who else is tracking their battles in the pour-over wars? And what weapons (apps, tools, hacks) are you arming yourselves with?

I tracked every brew for the first year or so after I started looking for specialty coffee. I still have all the analog logs. And less frequently thereafter. Now I only log comparisons and rare great choices. It's become second nature to assess a bean and I've also got some go to recipes. Since I tend to brew kind of similar beans after lot of experimenting I don't need to vary my methods often

@Yerson Gutierrez this is great approach. I have a similar go to recipe and then looking at how the bean crumbles, I make small changes
Caffé culture show London
Today I snuck out of work for a couple of hours to the caffé culture trade show. I've not been able to attend any coffee events this year and it was fun to go to one even for a short period. Tasted some wonderful coffee, met some interesting people and saw some amazing feats of engineering! I hope some of you were able to visit as well? Would have loved to meet some of you there, and maybe next time we will!

@Mark Paradis yes that's pretty interesting question, they did explain about some filters and other mechanisms but I need to see it in action in a cafe or something. They designed it to be used in customer facing roasteries, unfortunately they couldn't name a place where I could visit
