I have never pickled Asparagus…. There is nice local Asparagus and I thought I should pickle a few jars… does anyone have a good recipe for Pickled Asparagus… 🙏🙏♥️

Pumpkin Mac &Cheese
This is one of those cozy meals that feels fancy… but is actually simple to make and perfect for using up pantry + garden ingredients. Ingredients: • 2 tbsp oil • 1/2 large sweet onion (diced) • 1/4 cup flour • 1 tsp onion powder • 1 tsp garlic powder • 1 tsp paprika • 1/2 tsp salt • Pepper to taste • 1–2 tsp Dijon mustard • 2 cups stock (I use chicken) • 2 cups milk or heavy cream • 1 cup pumpkin puree • 1 cup shredded cheddar cheese • 1/2 cup havarti • 2 tbsp cream cheese Topping: • 6 slices havarti • 1 cup panko breadcrumbs • 1/2 cup parmesan cheese • 2 tbsp melted butter Directions: 1. Cook pasta in salted water and set aside. 2. In a large pan, heat oil and sauté diced onion until soft. 3. Stir in flour and cook for 1–2 minutes to form a roux. 4. Add spices, Dijon, and slowly whisk in stock and milk. 5. Stir in pumpkin puree and let it thicken. 6. Add cheddar, havarti, and cream cheese—mix until smooth. 7. Combine sauce with cooked pasta and transfer to a baking dish. 8. Top with havarti slices. 9. Mix breadcrumbs, parmesan, and melted butter—sprinkle on top. 10. Bake at 375°F until bubbly and golden. Real food. Simple ingredients. This is the kind of meal that fills your pantry *and* your table. Would you try pumpkin in your mac & cheese… or is that a hard no?

Busy, busy, busy
Hi everyone, I want to let everyone know I've been so busy the last little while. I've been trying to post on here and keep forgetting. I don't knownof anyone has been keeping up with the egg incubation we've been doing? They have hatched and a video for that will be out soon. I am still working on a sourdough masterclass which will eventually be up in the class room. We have a tone of new comers to the community, I will try to organize everyone and give them a welcome soon. How is everyone doing, getting the gardens in? Leave us a comment and show pictures we love seeing them.

Still too early to seed anything … some mornings is still a heavy frost.. sometimes -5 still… I think it was about 0 last night… still not going to chance it with some stuff I have started… I have some onions, tomatoes, peppers and I started sweet peas… so we carry everything in the garage at night… and pull it out during the day into my little greenhouse.. although I was thinking I would like to try and seed some peas and lettuce etc… as the days are getting nice and warm.. but the nights are still cold… 🤷‍♀️

Finally got the starters planted and the ones I had to buy. What’s everyone else’s garden looking like? Excited for anything? We happened to find the peppers they use in Tabasco sauce and my oldest son and I are going to attempt to make some.

@Michela Baker ….Hahahaha… then I guess you would not like -30 ! 🥶 This morning the roof on the garage and the grass was very white! Sorry to hear about all your plants that you lost…. It is sooo heartbreaking when that happens…. And yes… the greenhouse can definitely get too hot.. it is like a hot sauna …definitely need air flow…
Tallow…
Hi Megan or any other homesteaders in the community….my husband just bought a huge bag of beef fat from our local butcher… he wants to make tallow…. I remember when I was young my mom would render the pork fat down for lard… she would do it in the oven on low heat… but for the tallow… we were told to cut it in small pieces and cook it on low on the stove and strain it … we want our own fat for cooking etc… Thank you for any responses…

Alright…. We made the Tallow♥️.😉 So I cut it all up in very small pieces….and did it on low in the Slow Cooker… I had some left over that didn’t fit in the slow cooker so I did it on the stove on low… I actually did the one in the Slow Cooker for two days…. I had used an Immersion blender at the end to break up the bits smaller…( I had seen a few videos on UTube that people did that… one was Homesteading with the Zimmermans) We Rendered a fair amount… My husband was able to fill up the deep fryer as he has been talking about French Fries in Tallow for a LonGggg time…. And we got 5 Pints and 2 Jam jars… The fries were Excellent… made some last night … now I want to try and make some Tallow Body Cream ♥️🙏♥️ So happy to have this… now don’t need to use much Seed Oils …

Oh…. I should have mentioned that we strained it with Cheese cloth in a colander… I doubled two cloths… And I read that people cook the bits more or gave to chickens etc… we just gave it to the birds to nibble on….
