So I wanted to try @Lena Nguyen’s Fried Rice meal prep recipe. We made this for dinner tonight and swapped out the protein for chicken breast. We even made our own riced cauliflower in the food processor. My husband was even the first one to grab the scale today. He started weighing the ingredients and before I knew it my daughter joined in. It became a family affair and it was quite comical. We had a lot of fun preparing this meal together. I took some pictures and missed some of the funniest moments, but you can get the idea. It was great to have the support of my family tonight. My husband has been wanting to help me reach my goals lately. Tonight he even said “I can try new things”. They used to fight me on my nutrition goals, but things are changing. It is really helpful to have the support of my family. If you are feeling alone… do not give up! You never know who is watching your example. Keep going. It is worth it. PS - the dinner was delicious, low calorie, good protein, and I was completely stuffed after eating this dish.
