Blackberry Harvest - Help! 😋
In the town where I live, Powell River, BC, we celebrate with an annual Blackberry Festival. It’s a big Friday evening event – streets closed, live music, food, the works. 🎉 The funny thing? The star of the show is the Himalayan blackberry, which, as you may know, is an invasive species that pops up anywhere the soil is disturbed. Kind of odd to celebrate it… but hey, we make the best of it! This year we picked about 60 pounds. So far, I’ve used them in: - Smoothies - Pancakes and muffins - Syrup - Salad dressing / vinegar I love jam and jelly, but I try not to eat much sugar, so I’m looking for other creative uses. I can (and will!) freeze a bunch, but before I tuck them all away… 👉 What’s your favourite way to use up a mountain of blackberries?
