Week 5 Time Management and Meal Timing
Hmm which is harder for me... Time management or meal timing/prep? 🤔 😅 All of the above. I guess meal prepping is not really that hard, I just have not had a desire to do it. Lazy? Probably. I am a Mom of 3 living with one of the grandmas, and she is a take-charge, change-plans-at-the-drop-of-a-hat, this-is-what-we-are-doing-now.... kinda person. Which is fine... we live under her roof, but she is like a little ball of chaos that I'm working with and around. 6 People under one roof and I am the only one who wants to make a real deal shared schedule. With school drop offs and karate classes, church on Wednesday nights, plenty of homework, and all the things... we really fly by the seat of our pants around here. I had schedules going for us this summer, as well as meal plans, but I am out of ink right now for my printer, and have not had the money to get more ink 😅 but I am going to really try to get back on my meal planning (pen and paper it shall be) because tracking macros has been the only thing that I have seen work well and quickly, for losing weight. I was not eating near enough before I started tracking. The past couple of months have been a whirlwind, I have been driving from Jax FL to Memphis TN a LOT because my mom has been dealing with brain cancer, was in the hospital for about a month, and she lives in Memphis, so... I have gained like 10 lbs since I signed up for this challenge, because I have not been active here, to say the least. I need all the support I can get and I am committing to showing up as much as possible. The videos on here are so incredibly helpful and I appreciate you coaches so so much!

I completely understand! I’m a stay-at-home mom and caregiver, I have a 5 year old who just started kindergarten, a 3 month old EBF baby, and I take care of my 89 year old grandma who has Parkinson’s and dementia. Between my daughters school, gymnastics, church, birthday parties etc, my grandmas Dr appointments, taking care of my baby, keeping the house clean, and doing my husband’s meal prep I feel like the last thing I have time to do is take care of myself. My husband works 6-5 so his meal prep is non-negotiable for me- otherwise he’ll starve at work (no vegan fast food options). My biggest hack for cooking his meal prep is staggering it through the week. I do three main meals: protein pasta, tvp, and tofu. I make a big pot with 7 meals worth (sometimes 10 and I’ll eat some of them) that way it only takes 1-2 hours out of a day and I can do that 3x a week. His other meals are Greenbites and edamame (no prep for me) and protein rice crispy treats (again I just do this when he’s gonna run out and do it a different day that the other cooking). I’m sure this would be harder for some people than just doing it all in one day, but I personally LITERALLY NEVER have a day where I can just spend 5 hours undisturbed cooking for the week. Idk if this helps you at all but just wanted to share my method of managing the craziness!! I also have blank white board things, a whiteboard calander and list on my refrigerator. Makes it so I can write anything I want whenever I need to and everyone can see it. Also keeps everyone informed of our schedule bc everyone uses the fridge!

I want to become a Registered Dietitian with a specialty in plant-based eating. I joined this community to get a feel for what online nutrition forums look like and to have accountability when it comes to my personal nutrition and fitness goals. Hey 👋 so cool to see a (future) vegan dietitian! I’m only a nutrition coach (super aware of the difference and I try to never overstep that difference) but I’ve gotten into a few debates with RDs who tried to tell me veganism was unhealthy and unsustainable for the general population. I think that’s an outdated viewpoint and I hope more people follow the path you’re on!

👋🏾 Justin here. I'm not new to veganism and fitness, just the sense of community and being a part of one. I stay in Mebane NC. I'm an actor, linguist and chef(neither of the latter two am I good in) language enthusiast and instrument player. Video gamer, reader and crafter. So the plant base diet hasn't quite picked up in the area. Im a trained chef and that's where I became vegetarian. Had a classmate who couldn't digest meat and I learned a lot from her. So I started there in 2006. My desire is to be in the best shape I can be and to give myself some longevity while staying conditioned, because I want to a look cute in my clothes, feel confident and comfortable because I want to swim again, do capoeira more, and you know date, but let's be honest a desert has more water in it that the gay dating pool, just saying, jaja. Working on a better life and wanting to improve myself mentally, physically, emotionally so that I can start giving back. Thank you and I'll been chatting around. My mantra

Hey 👋 I live in Mississippi so I ABSOLUTELY understand the “no vegans around me” struggle 😂 dating was miserable for 3 years, then I met my now hubby and he went vegan after one date with me! So there’s hope in the world!

I’m really looking forward to interacting and connecting with everyone on here! Ive been vegan almost 5 years now and honestly learn so much every day about more ways to cook delicious vegan food. I’m a mom and bodybuilder, but more focus on the mom part lately as I just had my second baby in August. We live in Mississippi but I’m from New Mexico and love to travel! Thank you all for being vegan and I hope to add value to this community by posting some recipes soon!

Protein waffles
So as some of you know, my wife and I have a food business (Conpassionate Kitchen) and we sell certified vegan and organic baking mixes in compostable packaging. Inspired by this awesome group, I’ve been trying to create some higher protein recipes with our products and came up with this from our Everyday Baking Mix. 1 scoop vedge protein powder 1/2 cup Everyday Baking Mix 1 cup water Mix all together and cook in waffle iron or can also be used to make pancakes. Comes out to about 8 grams protein per 4” waffle. These make great little protein travel snacks as well. Those look great! If gluten isn’t a problem, I suggest adding vital wheat gluten for protein! You can replace up to 1/4 of the flour with vwg without it affecting the texture much. You do have to add a little extra liquid, but it’s a great protein boost to any baked good without protein powder
