No rest method vs over drying
so I’ve been playing with a lot of techniques lately, and recently, I’ve tried the no rest method of just sticking the wet macarons into the oven and baking them. I’m not sure if I noticed them being glossier than when I oven dry them, but I don’t know how I feel about the feets for no rest— the gray macs are the no rest method and then my coffee ones on the right are for oven drying for seven minutes

@Natasha Johnston oven drying i keep it at 290°f and crack the oven w the macarons for 6-7 minutes? depends on the weather :p no rest i do 300°f for 7 minutes and then bump it to 315°f for another 10-12 min

@Fabíola Oliveira the left is gray and the right is w coffee beans but thank you for the input! They’re actually full after maturing and i didn’t see any browning besides what the coffee color added(:! Crystal’s recipe uses oven drying with a cracked oven iirc— i baked the wet macarons without oven or non-oven drying if that makes sense😊

i’ve been baking so much lately and practice is definitely making perfect😄😁 my biggest obsession right now is my chocolate shells with strawberry buttercream and cream cheese mousseline in the middle

oooo this happened to me when i was baking @ 300°F for 15 min and dried them for too long prior now i do 290° for 18 min and it works perfectly
French meringue
I went back to making French meringue macarons just to see if I was being a little bit too reliant on how stable italian meringue macarons are, and I think they came out pretty good, a little bit risky to do that on some orders that I have to fulfill, but it paid off, and I am absolutely obsessed with coffee shells with dark chocolate filling
