I’m going off the job the wine needs to do and what the food is asking for, not the label story. 1. Dominant food feature: salt/fried, creamy, or tomato/spice/grill 2. Pick the job: Lift / Texture / Grip 3. Grab the hero style: - Lift = Metodo Classico / Vermentino / Verdicchio - Texture = Fiano / Greco / Timorasso - Grip = Cerasuolo / chillable reds served cool
