My interest in sourdough started WAY WAY back in the mid 90s. I had an interest in baking and through a series of crazy events and connections found myself offered a job to help run a wood-fired bakery in the New York Catskills. I left there after several years to go to business school and really quit baking much at home for a couple decades. In 2019, I started a new job that allowed me to work from home a few days a week, and I began to bake bread on a regular basis again. My focus at that point was sourdough as that was mostly what did when I baked professionally, and that has been my focus ever since!

Starter Feeding Cues - 3/4 Coffee Hour Chat Thread☕️
Are You Feeding on a Schedule… or Feeding on Behavior? Since we're building starters at the table this months let's talk about feeding cues! Maybe you've had a starter for a while and you have it's feeding schedule nailed. If so, tell us about your beginning journey surrounding feeds and how you knew (or thought🤣) it was ready for a feed. If you're completely new to this journey, listen up!! I'm going to explain a few feedings cues! In your starters few days of life-building, there won't be many "cues" per say. Just stick to the schedule in the welcome rise course! Make sure your consistency is thick but stirrable! You won't see too much action in the first few days! But you can note that if you see it get runny or develop some liquid (hooch) on top, it's not dead!! It's just hungry! That cue is the same for established starters! Now that we have that quick briefing lol. Let's talk about it💬👇🏼

@Samantha Mayers You're right. That's essentially what happened. It went from almost tripling to barely doubling. Against my better judgement I went ahead and baked with it and didn't get the level of bulk fermentation I needed. And because I was trying to bake around a schedule I moved forward when I "thought" things should be ready rather than waiting for clear signs things were actually ready.

I can think of lots of events that made me frustrated and feeling like quitting. But the one thing that I often feel during both good bakes and bad is guilt. Sometimes it just feels selfish because there are always so many other things I could be or should be doing. I could be walking the dog, helping with laundry, putting in extra time on evenings and weekends for my real job. The list goes on and on. In reality I know I still do all those things but it is hard to give yourself permission sometimes to just enjoy something that is for you. And in reality, I know family and friends appreciate and enjoy my baking. So don't be like me! Keep baking!
