When the client states to do breakfast, arrive early, quiet, discreet, soft movements, remember the Clients are sleeping. You might arrive 5 Am just be extra soft and gentle when moving around, the wrong move can set the tone for the day!

Where do you think chefs miss most when it comes to discreet?
Pivoting last minute in the Private world!
Last nights dinner was great, dinner was set for 4 people at 7 pm, the principal arrived in the kitchen and stated we now have 7 guest and dinner is at 5 PM if possible! it’s important to pivot as best as possible for the principals request! Yes, it could stressful, but what helps you be able to pivot easily and comfortably is being completely prepped and follow your time line. All in all dinner went out at 5 PM as requested and successful! Goal: principles greatly appreciated the pivot!
