@Juan Rosenzweig currently, we are a handful of people but are in the hiring process now. We took over an existing café and inherited some of the employees. Some pros and cons came with that of course. As an American, my Czech skills are still not at a perfect level of full communication and one of the employees doesn't speak any English. This has certainly hindered clear communication for us. Unfortunately, we will have to let them go (for reasons extending beyond this), but staffing can be problematic until next month when there's more traffic coming in. I think curating the right environment is what is most crucial for us in the developmental stages. Just working through the balance of what you mentioned, having approachability while also drawing a line of being in charge.

@Steven Robert Thank you, Steven! It's a special feeling for sure to be able to have this all come together so close to 'home'. I believe the many years spent in the area will help bring success to the place as we have a great community established already. So far, the biggest surprise is probably the red tape behind it. There are a lot of elements that require layers of bureaucracy to get to the next stages in the process. Once this is completed, though, I feel many of the other pieces will be smoother. Have you already started a café yourself ? 😄
