🌮 Cheesy Taco Potato Bowls
Ingredients - 1 lb lean ground beef or turkey - 4–5 medium potatoes, diced - 1 small onion, diced - 1 packet taco seasoning - 1 cup shredded cheese - 1 cup corn - Salsa - Salt, pepper & garlic powder - Small amount of oil Optional toppings: sour cream, Greek yogurt, green onion, jalapeños, black beans, avocado or hot sauce. Directions 1. Dice potatoes into small cubes. Toss with a little oil, salt, pepper and garlic powder. 2. Air fry at 400°F for 18–22 minutes, shaking halfway through, until golden and crispy. 3. While the potatoes cook, brown the ground beef and onion in a frying pan. 4. Drain if necessary, then add taco seasoning and a splash of water. Stir in the corn and cook another 2–3 minutes. 5. Divide crispy potatoes into bowls and top with the taco meat mixture. 6. Add shredded cheese while everything is hot so it melts. 7. Top with salsa and whatever other toppings you like. 🔥 Optional: Put the assembled bowls under the broiler for 2–3 minutes to get the cheese extra bubbly and browned.

My sister would have been 40 today. She passed away on March 7, 2015, and for whatever reason, I made the “mistake” today of going back and looking through her Facebook. That hit me a lot harder than I expected. I’ve always thought I handled her birthday and the anniversary of her passing pretty well over the years. But today made me wonder if maybe I didn’t handle it as well as I thought. Maybe I just got really good at blocking out some of the feelings and carrying on. Seeing her pictures, reading old posts, seeing her name and little pieces of a life that feels both so long ago and like yesterday brought a lot of it back. Grief is strange like that. You can go months or years feeling like you’re okay, and then something small opens a door you thought you had closed. A picture. A song. A birthday. A memory. And suddenly the sadness is right there again. But I also think that’s part of loving someone and losing them. You don’t necessarily “get over” it. You just learn how to carry it while continuing to live your life. There are going to be hard days. There are going to be moments when sadness wins for a little while. And I think it’s okay to let yourself feel those moments instead of always trying to push them away. Then you keep going. You work. You laugh. You raise your family. You build things. You make memories. You appreciate the people who are still here. And you carry a little piece of the people you’ve lost with you through all of it. Life keeps moving, and somehow we find a way to move with it. Happy 40th birthday, sis. Wish you were here. ❤️

Off the grid….
Hi all, wanted to take a minute and apologize for falling off the grid. In a short period of time my Dad was diagnosed with an aggressive kidney cancer, had surgery to remove his kidney and cancer this past week. Had a few complications but seems to be back on track to recovery. Through all of this I have appreciated reading comments, getting notifications as it helped me not to forget about me. Made me think twice about over eating, take the time I needed to get a quick walk in, or workout and to reach out to those who care about me and could support me. Thank you for the reminders even though you may have had no idea.

That’s a wrap on our 8-week Summer Accountability Challenge! First off, I want to thank EVERYONE who participated, checked in, completed challenges, encouraged other members and kept showing up throughout the summer. Summer is probably one of the hardest times of year to stay consistent. Vacations, BBQs, weekends away, kids, work, drinks, good food… LIFE. 😂 The whole point of this challenge was never perfection. It was about ACCOUNTABILITY, CONSISTENCY and finding ways to keep moving forward even when life gets in the way. After eight weeks of challenges, check-ins and points, here are our FINAL TOP 3! 👇 🥇 1ST PLACE — STEPH BETTS! 🏆🔥 I don’t think this one will surprise anybody. 😂 Steph was an absolute MACHINE throughout this challenge. She participated, checked in, encouraged everyone else and completed pretty much everything I threw at the group. The funny part is… Steph has pretty much already won her Recovery Room and Tanning upgrades through all the weekly prizes she’s collected. 😂 So Steph, I hope you’re OK with that! There’s only so much winning Steph can do in eight weeks! 🤣🏆 Seriously though — incredibly well deserved. 🥈 2ND PLACE — CAITLIN DAVIES! 🔥 Caitlin earns her choice of a Recovery Room OR Tanning Membership Upgrade! She stayed consistent with her lifting, became more aware of her daily movement and kept herself accountable throughout the summer. She’s heading into fall within 10 lbs of her goal and in a completely different place than she was this time last year. Awesome work! 💪 🥉 TIED FOR 3RD — NORA CONNELL & GRACE SULLIVAN! 🔥🔥 We had a tie, so BOTH of you are getting the third-place prize! You can each choose a Recovery Room OR Tanning Membership Upgrade! Both of you stayed involved and accountable through your own challenges this summer, and you earned it! 👏 CONGRATULATIONS STEPH, CAITLIN, NORA & GRACE! 👏 And again, thank you to EVERYONE who participated. Reading through all of your final check-ins really reinforced why we did this. Some people lost weight. Some lost inches. Some got stronger. Some attended more classes. Some improved their eating. Some simply managed to maintain through a crazy summer.

@Lisa Reid I thought the exact same thing when I spent Sunday through Tuesday moving 3 people into 2 different apartments. Carrying my 50th box without breaking a sweat made me realise how awesome it is to be in better shape and used to regular movement!
