collagen supplements?
hey everyone! i’ve been diagnosed coeliac for about 5 years and still trying to pinpoint why my stomach is so messed up. i’ve been googling about how to repair my gut and there’s a lot about collagen helping to heal gut damage but it’s overloading my brain a bit haha! has anyone used collagen to help their gut? if so, which ones would you recommend? Hi, i'm almost 2 years in to healing my gut. I'm doing it by having home made soup, made with bone broth, I use Borough Broth as i think it's the best, which is high in collagen, sauerkraut, homemade milk kefir (I'm still lactose intolerant because of coeliac but I can tolerate small amounts as the kefir grains feed on the lactose in the milk so as long as you dont eat the grains you're ok) and 2 small squares of 85% dark chocolate. I have these every day and i'm definitely seeing changes. My gut is starting to feel happy again. I'm now able to start introducing things like green leafy veg & baked beans that my gut objected to before.
Chocolate chip muffins.
I had a go at these today. The loopy whisk GF chocolate chip muffins. I'm very pleased with how they turned out.

@Charlotte Boyle I searched online for gluten free chocolate chip muffins & the Loopy Whisk recipe was there so I decided to try it.
💯 gluten free hidden heart cake.
I made this for my hubby for valentines 💝. He doesn't need to be gluten free but I wanted to sample a slice 😜. I'm pleased with it. It turned out well & is delicious. It's a Becky Excell recipe if anyone's interested in having a go.

Taco loaded potatoes
We had this for dinner. It was delicious & I could've eaten more. I had to adapt it a bit as I can't tolerate corn so omitted the Tacos. I highly recommend.

🌮 Tasty Tuesday: Taco Loaded Potatoes
This is one of those meals that feels fun and satisfying, but still supports your goals! It’s packed with protein, full of flavour, and a great option when you’re craving something a bit different from your usual meal prep. 📊 Per serving: 626 calories | 53g protein | 37g carbs | 29g fat Here’s what you’ll need 🛒: - White potatoes (300g) - Avocado (100g) - Onion (60g) - Olive oil (½ tbsp) - Red bell pepper (100g) - Lean beef mince (300g) - Grated cheese (60g) Seasoning:1 tsp smoked paprika, 1 tsp ground cumin, 2 garlic cloves (crushed), ½ tsp chilli powder, salt and pepper to taste Optional: fresh coriander, lime wedge, 10g gluten-free nacho chips (crumbled) Here’s how to make it 🧑‍🍳: 1. Toss the diced potatoes in ½ tbsp olive oil, salt, pepper, and optional paprika. 2. Place in the air fryer at 200°C for 15-18 minutes, shaking halfway, until golden and crisp. 3. Heat a non-stick pan over medium heat and add the beef mince. Cook for 4-5 minutes, breaking it up until browned. 4. Add the onion, red pepper, and garlic. Sauté for 3-4 minutes until softened. 5. Stir in the smoked paprika, cumin, chilli powder, salt, and pepper. 6. Add the chopped tomatoes and simmer for 5 minutes, stirring occasionally, until slightly thickened. 7. Divide the potatoes between two bowls and spoon the beef mixture over the top. 8. Add avocado slices. 9. Sprinkle with grated cheese, fresh coriander, and optional crushed nacho chips (5g per bowl). 10. Serve with a squeeze of lime. Love, Ella 🧡 PS. I know it's not Tuesday 🤣 But I still titled it Tasty Tuesday so you can find this with the rest of them if you search for the recipes in Skool! Back to regular schedule for recipes next week!
