Hello - If most of varnish is off, do I need to use something to strip it? Would sanding work?

I’m in Sheffield UK. I have just dipped my toe into starting a restoration of an old kitchen table with one drop leaf. I have had it for 30 years and I bought it from an antique shop. It’s a small all wood table that would sit against a wall and the drop leaf could be put up when needed. I eventually left it in the garden and it broke down over the year. I have salvaged it, cleaned and sanded all the component parts. I am due to visit a community workshop call Hackspace where I can take all the bits and have a space to rebuild. There is obviously some damage but I am reassured by watching videos on YouTube that I could resurrect it. The one thing I can’t live without is my hand sander
