Hello - If most of varnish is off, do I need to use something to strip it? Would sanding work?

Mahogany table
I found a small dark mahogany table, with extremely deep scratches- I sanded part of it but really wanted the dark color - not sure how to get it back to the dark color- is it a stain?

Table unglued in middle
Refinishing a table that sat over a heat register, 2 maple boards previously glued together came apart in the middle, and finish has peeled back, then someone sat plants in it, and rings created…. My question is do I fill in the crack or in glue and attempt to reglue them? Owners want table stripped & stained darker color.

Updated table top - stain and 2 layers of Vermont Natural Coating poly whey

@Aaron Moore it worked out really good. I had sanded down and applied a stain on it, but its colors were very dark, so I sanded that off and put down a conditioner, and reapplied. Afterwards I applied the Vermont Coating which made the stain look even better.
More than 1 piece at a time?
I thought I could juggle - I’m building a cabinet & I have a table - ( that I feel guilty) I’ve not refinished yet. It appears I don’t have time to juggle 2 pieces at the same time. I currently don’t have consistent work to hire an assistant-
