Pain au Levain 1
I made a double batch this weekend. This one I didn’t have another banneton for so it had to proof in a loaf tin and I think the tin was too big/my shaping wasn’t tight enough. When I pulled it out it was a bit flat/spread and it didn’t spring as much as the one that was in a banneton. Considering it was my first bake in 2 weeks I’m not mad! But I think a touch under? Don’t mind my ugly K for my sister Kelly 🤣

And here’s the other one from that batch! This was shaped into the banneton and got a better spring. I screwed up the 7 minute rescore though. Also for the life of me I can’t do a good wheat stalk score 🤣 can’t win them all!

Busy weekend. This loaf is UGLY. The scoring sucked and I tried to fix it with a 7 minute restore and YIKES 🤣 I had to have a good laugh at it. Overall for a first attempt I’m not too mad at it! I don’t love rye so not sure I’ll continue to make this one unless someone requests it but it’s not bad by any means!
